Taco Cups

Ingredients:

  • Rojo’s® Mexicali Dip
  • Small Corn Tortilla
  • Vegetable Oil
  • .5 lbs Ground Beef
  • Taco Seasoning (to taste)
  • Cheddar Cheese
  • Green Onion (chopped)
  • Sour Cream

Instructions:

  1. Pre-heat oven to 350˚.
  2. Cook .5 lbs of ground beef over medium heat adding taco seasoning to taste.
  3. Take corn tortilla and cut into four darts. Place tortilla in a muffin tin baking pan making sure to tuck the darts on top of one another. Brush with vegetable oil.
  4. Bake tortilla cups for 10 minutes.
  5. After baking, layer each tortilla cup with ground beef, Rojo’s® Mexicali Dip, and top with cheddar cheese.
  6. Return the baking pan to the oven and bake for another 5 to 10 minutes or until cheese is melted. Garnish with green onion and sour cream.
